Really Easy Chicken Pot Pie
Ingredients:
- Pie crust (top and bottom). You can use the frozen pie crusts.
- 2 medium size chicken breasts, cut in bite size pieces
- 2 tsps olive oil
- 1 tsp salt (or to taste)
- 1 tsp pepper (or to taste)
- Frozen vegetables (I’ve used a combination of broccoli, carrots, peas, corn, mushrooms)
- Creamy Soup (for example, cream of chicken; Cream of Mushroom; Cream of Asparagus; Cream of broccoli)
Instructions:
- Cut the chicken into bite size pieces
- Sautee in olive oil, salt and pepper.
- In a separate pan, open a can of cream soup and make as directed except only use 1/2 can of milk or water, and mix really well
- Add slightly defrosted veggies into soup and mix well.
- Add chicken to the soup and veggie mixture
- Make sure the pie crust is defrosted.
- Pour the soup mixture in to bottom pie crust
- then take another pie crust and roll it out over the soup mixture
- bake at 350 for about 40-45 minutes.
