At the tender age of 3, my son is already asking me what I'm making to eat. With each meal, he needs to know what he's going to eat. He even has an opinion on the menu!
Despite our busy schedules, my goal is to have healthy, well-balanced meals for breakfast, lunch and dinner. Breakfast and lunch are quite standard in our house: some combination of eggs, waffles, sausage and toast for breakfast and some kind of sandwich and fruit for lunch. Now, that leaves dinner. How do you keep dinner interesting and healthy?
My Mom is an incredible cook. She's the kind of cook who doesn't need recipes. She can open the fridge, take inventory and within less than 30 minutes, she has created a delicious, healthy meal. The fact that she doesn't need a recipe creates a huge challenge for me. When I ask her for a recipe, she'll say "just a bit of salt" or "a little bit of pepper"...ok, how much is "just a bit"? I've never been able to figure that one out. I've even tried watching her and trying to write down the recipe. But, once again, how do you measure "a pinch"?
Despite this, I have received some great recipes from my Mom. Not only are they easy and fast, but both my husband and son enjoy the meals.
