"I think it depends upon your kid. My four and two year old almost never ride in a stroller and are used to walking everywhere. I last did Disney when they were three and one and we brought one stroller and a carrier just incase the older one needed the stroller. The younger one used the stroller and the older one never got in. We did exactly what you said we went back to the hotel after lunch and had the kids take a nap then went back out until dinner time.
As others have said you can always rent a stroller there in each park if you need it. If is were me and traveling with my two I would take one stroller and a carrier."
